Ex-Gleneagles chef Mandeep Saini brings bold Indian fusion to Edinburgh with Bombay Bistro

The award-winning chef, famed for his Bombay Club Sunday Feast, unveils a new East-meets-West dining experience with premium Indian whiskies and wines

Edinburgh’s dining scene has a new arrival this month with the launch of Bombay Bistro, led by award-winning chef Mandeep Saini, formerly of Gleneagles and London’s The Berkeley.

Located in Bruntsfield, the restaurant brings Saini’s signature East-meets-West style to the capital for the first time, blending the vibrant flavours of modern Bombay with the best of Scottish produce. The venue replaces Tom Kitchin’s Kora and promises an elevated yet relaxed dining experience that celebrates creativity, culture and connection.

Well known for his celebrated Sunday Indian Feast at Gleneagles and for creating dishes that bridge culinary traditions, Saini’s debut Edinburgh menu includes highlights such as Beef Chettinad, Haggis Tikki, and Sirloin Boti, alongside a curated selection of Indian whiskies and wines imported exclusively from India, making Bombay Bistro the only venue in Edinburgh to offer them.

Originally from Bombay, Saini brings over 15 years of international culinary experience. After honing his skills in London’s top hotels, he joined Gleneagles, where his inventive take on Indian cuisine became a firm favourite with guests.

Following his success there, Saini opened The Bombay Club in Auchterarder in 2023. The restaurant quickly earned critical acclaim, including Best Restaurant in Central Scotland in its opening year and Best Indian Dining Award at the SME News Scottish Enterprise Awards 2025.
