New Opening: Rudy’s continues UK expansion with Brighton pizzeria

The fast-growing pizza brand will open on Jubilee Street this Spring, marking the group’s 31st pizzeria.
Rudy’s Pizza Napoletana, the beloved Manchester-born pizza group, is setting its sights on the South Coast, opening a new pizzeria in Brighton this Spring. Bringing its famed Neapolitan pizzas to the seaside city, the new pizzeria will stay true to its roots, serving soft, fresh dough pizzas cooked in just 60 seconds, using the finest ingredients from Naples.
Occupying the former Chilli Pickle site on Jubilee Square in the heart of Brighton’s North Laine, the new restaurant will feature Rudy’s signature minimalist and industrial-style decor in a spacious 3,500 square-foot unit with approximately 160 covers for dining.
Since launching in 2015 in Ancoats, Manchester, Rudy’s quickly gained a cult following for its authentic Neapolitan dough and quality ingredients. Having taken on London, with fresh pizzerias in Soho’s Wardour Street, Tottenham Court Road, Spitalfields and Shoreditch, the new opening will mark the brand’s 31st pizzeria in the country.
The new Rudy’s Brighton will also bring opportunities for recruitment across 30 positions, with a particular focus on manager and highly skilled pizzaiolo roles. The award-winning employer also recently launched its dedicated Rudy’s pizzaiolo academy to teach both experienced chefs and first-time pizzaioli the Rudy’s classic Neapolitan style. Born out of passion for pizza, Rudy’s follows the authentic Neapolitan tradition of pizza-making, serving classic recipes such as Marinara, Margherita and Calabrese – all originating from Naples – the birthplace of pizza, alongside paying homage to famous pizzerias around the globe with its rotating specials.
Rudy’s signature dough is made fresh daily using Caputo ‘00’ flour which ferments for at least 24 hours. In accordance with authentic Neapolitan techniques, the dough is cooked in a Stefano Ferrara oven for around 60 seconds – resulting in a soft and light pizza with an airy and raised cornicione crust (the edge or rim of the pizza). Pizzas come topped with a variety of quality ingredients from Naples, including San Marzano tomatoes grown on fields next to Mount Vesuvius, and Fior di Latte mozzarella.
Visitors at the Brighton pizzeria can expect a concise selection of Rudy’s classics, alongside two rotating specials every six weeks, classic Italian desserts as well as a drinks menu featuring iconic Italian spritzes, crisp Italian and lagers from local breweries, and classic stirred cocktails.
