Gees Restaurant will reopen later this month with new Head Chef, Matt Smith, at the helm

The Oxford Collection is delighted to introduce Chef Matt Smith as Head Chef at ‘Gees Restaurant & Bar’ ahead of its relaunch this spring. The Oxford Collection’s famous Grade ll listed Victorian Glasshouse will reopen during the week commencing 23rd May 2022 following a £1,000,000+ refurbishment and expansion. 

Chef Matt brings with him more than 20 years of kitchen management experience, having previously headed up the team at The Ivy Oxford. His previous career highlights include running his own successful restaurant in Whitby, North Yorkshire, and as Group Chef for Provenance Inns & Hotels. 

Chef Matt’s flare for simple, authentic food that celebrates the finest local ingredients is the perfect complement to the rustic Mediterranean cuisine, for which Gees Restaurant & Bar is so well known. Guests can expect a taste of summer in Oxford with a daily evolving seasonal menu featuring traditional cooking techniques and master cocktails. 

“I ran my own restaurant for seven years and have long been supporting local produce and skills of the people behind the product,” says Chef Matt Smith, Head Chef, Gees Restaurant & Bar. “Gees is the perfect fit for me to continue with this philosophy – I have the opportunity to produce good quality, authentic food in arguably the best restaurant destination in Oxford… I love the fresh approach and simplicity of Mediterranean cookery, with the focus being on the ingredients and eating with the seasons – so expect summer at Gees to champion this…”

Gees Restaurant & Bar will reopen this spring with the addition of two new dining spaces; Gees Gallery and Gees Secret Garden. The new venues will increase capacity to seat up to 210 guests within the famous Grade II listed Victorian conservatory, Gees Restaurant & Bar, and utopia of Gees Gallery and Secret Garden. 

Gemma Holden, Restaurant Manager at Gees says, “I feel very privileged to be part of this exciting project and I look forward to summer outdoors on our new Secret Garden terrace, and also the extra dining space that Gees Gallery will provide. I cannot wait to get back into Gees, welcome back my team and our fantastic chefs, restock the bar, lay-up the tables and open the doors once again!”

Gees takes pride in serving fresh, seasonal and locally sourced ingredients. Signature dishes from Gees’ Mediterranean inspired menus, led by Chef Matt and his team, will be on offer for private dining events including; wedding receptions, graduation celebrations, birthdays, conferencing & meetings, or uniquely tailored events, with a variety of seating options.
