The Botanical Adventure- A ground-breaking new dining concept for 2019 announced

Ibiza’s No.1 pure vegan restaurant

WILD BEETS is the go-to vegan restaurant in Ibiza and the only true vegan restaurant on the Island – with a following amongst some of the world’s hottest DJ’s, musicians, models and sports stars, as well as a loyal local clientele.

Located in Santa Gertrudis, a pretty village in the heart of Ibiza, Wild Beets is a café by day and restaurant by night with a menu that takes vegan cooking to a whole new level. Creative, inventive and visually stunning, the menu is 100% organic and everything is made on the premises.

New for 2019, Wild Beets is launching The Botanical Adventure.  A brand new dining concept for the evening that will be a real game-changer. This will be food of the imagination and turn our conceptions of traditional food on its head, confounding expectations. Gone are the references to dishes as we know them, instead dinner will be a botanical experience in the true meaning of the word.

The new menu will be cooked up in the Wild Beets laboratory by owner and culinary inventor Cliff Grubin and head chef Gaston Alita. They will be joined by chef Alex Mark who has worked all over the world with prestigious chefs including Gordon Ramsay.

New dishes on the 2019 Botanical Adventure menu will include:

Try the Edible Forest (Mushroom pain perdu), Skip in the Park (Zucchini soup), or the Rising Sun(Tomato tartare), followed by a Gentle Squeeze (compressed seasonal fruit salad, cucumber & eucalyptus sorbet).

Fresh local spirulina and other wild botanicals are included in many of the dishes. There will also be mouth-watering organic botanical cocktails and mocktails created with Wild Beets own bitters and shrubs (vinegars).

  • Also new for 2019, Wild Beets will be going on the road. A family affair, Cliff’s daughter Nierika will be taking the Sejuiced (mobile juice bar) van to festivals across Europe, including Transition Festival in Spain, Pete the Monkey in France and Meadows in the Mountains in Bulgaria.

The menu at Wild Beets is plant-based, vegan, cruelty-free, gluten-free, fresh, organic and above all, delicious.  The philosophy behind Wild Beets is serving nutrient dense meals that taste great and look gorgeous.  By combining a healthy dose of science, nutrition and a love of good food Wild Beets successfully bring a healthy awareness to the table.

Wild Beets is the brainchild of native New Yorker Cliff Grubin. Originally owner/designer of super cool New York jewellery firm Black Hole Productions (Madonna was a fan). Cliff spent a lifetime travelling the world before being drawn to Ibiza over fifteen years ago, where he started Ibiza’s first juice bar, the original and legendary, ‘Sejuiced’, on iconic Benirras Beach, famous for Sunday drumming. He then went on to create ‘iPurify’, a line of cold-pressed juices and wellbeing-focused juice cleanses, before launching Wild Beets in 2014.
