Sussex offically opens in soho

Following on from the success of The Shed, in Notting Hill, Rabbit, on the Kings Road, and Nutbourne, in Battersea, the Gladwin Brothers have today, officially opened their first West End project on an iconic Soho restaurant site, celebrating the Sussex countryside captured within an eclectic mix of classic and progressive cooking.

Ingredients are sourced directly from the Gladwins’ family farm and vineyard or local suppliers handpicked by the three brothers, Richard, Oliver and Gregory, to ensure that an ethical commitment to sustainability is always at the core of their business.

Sussex is situated on a slice of Frith Street history, on the former site of Anthony Demetre’s seminal restaurant, Arbutus, and prior to that, Bruno Loubet’s first solo restaurant, Bistro Bruno.

The new opening marks an evolution for Chef Patron and co-founder, Oliver Gladwin. No longer a sharing dish concept, he takes his inspiration from his knowledge and love of classical cooking, alongside his passion for all things rural, merging home-grown, heritage dishes with modern cooking techniques and a forward-thinking approach.

Oliver’s new menu artfully combines the rustic and the refined, placing emphasis on local ingredients and produce with minimal waste, throughout each course. To begin, diners are recommended to Snack on Warmed Wild Yeast Volcano Bread with Smoked Whipped Butter; Tempura Garden Herbs with Sweet Chilli to accompany the fine English wines, beers and cocktails served in the welcoming adjoining bar area.

Starters will see the very best of Sussex ingredients come to life, with specialities including Monkfish Carpaccio with Aubergine, Lemon, Chilli and Toasted Pine Nuts and Red Amaranth or the Artichoke & Potato Nests, Beetroot Tahini, Pickled Onions, Feta and Dill Oil Dust.

Moving on to Mains, diners can feast on the vegetable-forward dishes with complex flavours that still remain honest, including the likes of Pumpkin Gnocchi with Caramelised Quince, Sage & Tunworth Foam, garnished with Buckwheat and Sorrel.

Daily Specials will also be a feature including everything from: Vinewood Roasted Grouse to Oliver’s signature Wellington, which will regularly change with variations such as Wild Mallard, Quince Wellington, Venison Wellington and even Cod Wellington which is perfect to share between two.

To finish, Desserts such as the Gladwin Brothers’ signature pudding, the Sussex Pond Pudding, Apple, Lemon & Marigold Curd with Spiced Burnt Butter and Custard, being both nostalgic and interactive will provide an unforgettable way to round off the meal.

The wine list features the Gladwin family’s award-winning range of Sussex wines from their Nutbourne vineyard in Sussex. Richard will also present a handpicked wine range from other like-minded producers around the world, many of whom he has personal relationships with.  The bar is also the perfect place to enjoy a leisurely after-work or pre-theatre drink with a selection of homegrown cocktails, wine and beer.

The Gladwin’s are putting their own stamp on the quintessential Frith Street site, employing contemporary artwork, artisan furniture and oak panels to complement the spacious interior. By day, the elegant room will be flooded with light from large windows and a roof lantern and in the evening the space will become warm, intimate and atmospheric.  Downstairs, the state-of-the-art kitchen will house a chef’s table for up to twenty people, offering the theatre of a working kitchen as a backdrop for special events- whether it is a seated dinner party or butchery masterclass.
