Laurent-Perrier Spring Tea with Sophie Faldo launches at InterContinental London

InterContinental London – The O2 has partnered with Laurent-Perrier and the 2017 Great British Bake Off winner Sophie Faldo to create an early spring floral themed afternoon tea.

The spring tea will run from 4 February until 31 March in Meridian Lounge at InterContinental London – The O2, situated on the Greenwich Peninsula. Sophie and the hotel’s Executive Pastry Chef, Amit Kumar, have worked together to create a spring-inspired menu with seasonal ingredients that reflect Sophie’s personal style.

The specially created sandwiches and cakes include Persian tea spiced scones with strawberry and Laurent-Perrier Champagne preserve and Cornish clotted cream; Forman’s London smoked salmon pinwheel with lemon crème fraîche and dill; cucumber and goat’s cheese on carrot bread with balsamic molasses; rhubarb rose and thyme baba; and pineapple, coconut and lemongrass verrine. Served alongside the menu will be a choice of East India Teas, with recommendations such as Darjeeling first flush and rainforest Lumbini, and Laurent-Perrier Cuvée Rosé and Vintage 2007.

We’ve taken inspiration from scenes of early spring cherry blossoms across London to create an afternoon tea that perfectly pairs floral and fruity scents with delicate flavours of the Laurent-Perrier Champagne. It has been a wonderful experience working with the hotel’s talented pastry team in the creation of such a vibrant and appealing menu.”
