Heard to open new burger restaurant in Soho in September

Following the success of its food truck origins and recent opening in Borough, Heard, the elevated burger restaurant from two-Michelin-starred chef Jordan Bailey, will launch a new site in Foubert’s Place, Soho, this September.

Jordan, whose fine dining career spans the three Michelin starred Maaemo in Oslo and his own critically acclaimed two star restaurant Aimsir in Ireland, brings the same obsession with quality ingredients, precision, and flavour to Heard, transforming the ultimate comfort food into something exceptional.

Since opening in Borough in March, Heard has become an instant hit for locals and visitors making the journey to sample Jordan’s double patty smash burgers, made with world-class aged British beef topped with English cheese and home-made pickles, served in a signature butter-toasted, roast potato bun. The Soho opening represents the next step in Heard’s story, which will see the concept evolved and the menu expanded, as well as the introduction of The Soho Burger, its first non-smash burger.

At Heard, great flavour begins with great produce and Jordan has cultivated a kitchen philosophy that rejects unnecessary complexity or over-processing in favour of standout ingredients that speak for themselves. Working closely with some of the UK’s leading farmers and producers, including HG Walters to source exceptional beef, Heard uses thoughtfully sourced British ingredients, selected for both their provenance and integrity.

Drinks will continue to play a key part of the dining experience at Heard, elevating it beyond a traditional burger joint. The wine list has been curated by Jordan’s wife and acclaimed sommelier Majken Bech-Bailey, whose work at Henne Kirkeby Kro, the two-Michelin star restaurant in her home country of Denmark, alongside Maaemo and Aismir have given her a depth of knowledge in low intervention wine and independent producers. Uniquely for a burger concept, each dish has been paired with a wine that perfectly complements the flavours including Majken’s own non-alcoholic BÆK wine, alongside craft beers from London’s Forest Road Brewery and signature cocktails.

The interiors  of the 134 square metres, 38 cover restaurant have been designed in collaboration with Superfutures, whose previous work includes London’s Barrafina, Bar Daskal and Chotto Matte. Featuring natural materials and organic textures, the design reflects the same focus on integrity and purpose as the menu.  Sculptural ceiling features draw attention to the open kitchen, while textured green micro-cement, clay-tiled floors, and warm timber furniture create a look that is  sophisticated yet unpretentious.

Split across two levels, each floor has a distinct style and personality. Upstairs, high stools, standing tables and a seamless flow of diners around a buzzy open kitchen gives the space a counter culture feel that lends itself to casual dinners and quick bites. Downstairs, upholstered banquette seating and tables, create a comfortable atmosphere perfect for relaxed evenings, while stools around the bar encourage pre-dinner cocktails and drinks to linger over.

Heard’s new site will open in September 2025 in Soho.
