The Ritz-Carlton, Langkawi Welcomes Château de Lamarque’s Seventh-Generation Custodian for Exclusive Wine Dinner
A celebration of French winemaking heritage and refined Chinese culinary tradition at Hai Yan
A thousand years of Bordeaux heritage met the tropical waters of Langkawi, Malaysia, as The Ritz-Carlton, Langkawi hosted an exclusive Château de Lamarque wine dinner at its award-winning Chinese restaurant, Hai Yan, on 31 October 2026.
Set against the dramatic backdrop of the Andaman Sea, the evening offered guests the opportunity to discover the story of Château de Lamarque through a curated selection of wines, accompanied by a Chinese menu created especially for the occasion. Guests were joined by Pierre-Gilles Gromand d’Evry, owner of Château de Lamarque and seventh-generation custodian of the estate, who shared insights into one of Médoc’s historic wine families.
Bordeaux Through the Lens of Hai Yan
The dinner took place at Hai Yan, the resort’s signature Chinese dining destination, perched above dramatic rock formations overlooking the sea. With expansive overwater decks offering views across the surrounding coastline, the restaurant provided a distinctive setting for a meeting of French winemaking heritage and Chinese culinary tradition.
An Evening of Wine and Culinary Craft
The evening began with a selection of canapés, including deep-fried chicken stuffed with truffle paste, dragon chives and bean curd skin; prawn tartlet har gao; and pie tee with assorted mushrooms and macadamia nuts. These were accompanied by SO Bastor-Lamontagne Crémant de Bordeaux Brut 2024.
The first course featured steamed Australian lobster with ginger-scallion emulsion, confit leek and lobster-soy beurre blanc, paired with Château de Lamarque 2017. The wine journey continued through a selection of vintages, each matched with a distinctive main course.
Tea-smoked duck breast with cherry and port compote, celeriac silk, toasted hazelnut and red wine jus was paired with Château de Lamarque 2022. This was followed by five-spiced pigeon with pigeon jus, fermented plum, charred Japanese aubergine and lotus root crisp, accompanied by the 2015 vintage.

The final savoury course featured charcoal-grilled Australian sliced Wagyu striploin, black truffle potato, charred baby leek and black garlic jus, served alongside Château de Lamarque 2020 Magnum.
Dessert continued the Asian-inspired flavour profile with goji berry sponge, red bean ganache, black sesame praline, mandarin gel and peach, paired with Château Bastor-Lamontagne Sauternes 2022. The evening concluded with chocolate, freshly brewed coffee and a premium selection of teas.
The dinner brought together the heritage of a Bordeaux family estate, the culinary artistry of Hai Yan and the natural setting of Langkawi. The experience reflected The Ritz-Carlton, Langkawi’s approach to dining as an opportunity for discovery, connecting distinctive destinations, carefully selected ingredients and the stories behind them.
