Tasca Captures the Spirit of Traditional Spanish and Portuguese Dining at Highbury Neighbourhood Favourite
Giacco’s, North London’s much-loved neighbourhood restaurant and wine bar, announces its latest residency with Tasca, taking place from Tuesday 9th December. After an immensely popular residency at Câv in Bethnal Green came to a close earlier this year (and a slew of one-night pop-ups across the UK and beyond), the pair are back with their second residency.
Tasca is a love letter to the couple’s – Chef Josh Dallaway and Sommelier Sinead Murdoch – travels through Portugal, Spain, and the South of France, inspired by the conviviality and generosity of the Iberian Peninsula’s dining culture. Giacco’s – the Italian-leaning creation of Leo and Danilo, hailing from Milan and Florence – is a fitting home for Tasca’s thoughtful approach to food and hospitality.

The menu will celebrate produce and community – inspired by the spirit of traditional tascas that line the streets of Lisbon and Madrid – to create bold, flavourful and big-hearted food.
Having worked across London as well as hosting pop-ups in some of the most notable restaurants in London (Brunswick House, Bar Bruno, Half Cut Market), Josh’s experience blends creativity and confidence with a respect for seasonality and technique.

Expect snacks such as Focaccia with Whipped Goat’s Curd and Cecina and Guindillas or Don Bocarte Anchovy and Pepper Butter Toasts containing an aromatic peppercorn butter layered with up to 10 varieties of peppercorn.
To follow, small plates such as Zamorano, Fried Almonds and Celeriac Honey precede heartier dishes, including the Rojão Sandwich – a spiced cousin to the Bifana – Ex Dairy Tartare à Bras, and Cornish Mussel and Chorizo Rice, a layered signature that the couple find impossible to take off the menu.

Diners can also enjoy Isle of Mull Scallop with Mushroom, Crème Fraîche and Nutmeg, Fideuá with Roasted Yeast, Walnut and Black Garlic, and Fried Partridge and Cinnamon Curry. To round off the evening, opt for Pumpkin Ice Cream, White Chocolate & Hazelnut Miso.
Alongside Josh’s menu, Sinead has curated a special selection of wines to pair with the dishes, which are a thoughtful reflection of her ethos to elevate female-founded or female-made wineries. With low-intervention, sustainable winemaking at Sinead’s heart, the bottles have been chosen for their story and character.

“We’re thrilled to have Josh and Sinéad close out 2025,” says Leo, co-founder of Giacco’s. “It’s inspiring to see a duo who bring equal care to both the kitchen and wine when creating a menu – they are genuine with their approach, aligning perfectly with our ethos here at Giacco’s. Shaped by their travels, hospitality and community are at the heart – it’s a place for everyone – whether you’re stopping by for a quick glass and a snack or settling in for a long meal with loved ones.”

Adding to the collaboration spirit, Tasca will host special guests on Sunday’s during their residency at Giacco’s, named Tasca and Friends. Kicking this off will be Emily Skimming, head of pastry at Morchella, who will help curate a special menu with Josh on Sunday 14th December.
Tasca at Giacco’s runs from Tuesday 9 December – Saturday 31st January, operating Tuesday to Friday, 5pm – 11 pm, and Saturday 1.30pm – 11 pm. Bookings are available via giaccos.bar, walk-ins welcome.
Giacco’s closes for the festive season from 22nd – 28th December and 1st – 5th January.
